This weekend we made gluten free chocolate peppermint treats three different ways and had a blast. I love getting my kids in the kitchen, and the holidays are no exception. It’s fun and it helps them develop a positive relationship with food. This time we experimented with all things peppermint and of course, chocolate. We made chocolate covered sandwich creme cookies, chocolate dipped mini candy canes, and chocolate dipped pretzels. The recipes are very simple, and easy enough for the kids to do all by themselves if you’d prefer to watch the action.
Before we started any of the recipes, we heated a bag of Enjoy Life mini chips on the stove until it was melted and then transferred it to a bowl. We also placed some Spangler candy canes in a plastic bowl and crushed them with a masher, thought you could also do this with a rolling pin. Here are the recipes:
Chocolate Covered Sandwich Creme Cookies:
- Line a baking sheet with parchment paper.
- Dip gluten free chocolate sandwiches cremes (we used kinnikinnick K-Toos) in chocolate until they’re totally covered.
- Place them on the parchment paper.
- Sprinkle the tops with crushed candy canes.
- Place in the refrigerator for 30 minutes.
- Enjoy!
Chocolate Dipped Candy Canes:
- Line a baking sheet with parchment paper.
- Dip the bottom half of mini candy canes in chocolate.
- Place them on the parchment paper.
- Sprinkle the chocolate parts with crushed candy canes.
- Place in the refrigerator for 20 minutes.
- Enjoy!
Chocolate Peppermint Pretzels:
- Line a baking sheet with parchment paper.
- Dip gluten free pretzels in chocolate until they’re totally covered.
- Place them on the parchment paper.
- Sprinkle the tops with crushed candy canes.
- Place in the refrigerator for 20 minutes.
- Enjoy!
