Vegan Red White & Blue Popsicles

This recipe is gluten free, dairy free and vegan. It makes 6 standard size popsicles.

Ingredients

Blue Layer:

  • 2 tbsp blueberry juice
  • 3/4 cup lemonade
  • 3 drops blue food coloring optional

White Layer:

  • 1/2 cup key lime yogurt non-dairy
  • 1/4 cup water

Red Layer:

  • 1/2 pound strawberries fresh, ripe, and chopped
  • 2 tbsp sugar
  • 1/4 cup water

Instructions

Blue Layer:

  1. Pour the lemonade into a bowl or large measuring cup.
  2. Add 2 tbsp of blueberry juice and stir.
  3. Add 3 drops of blue natural food coloring until you get the desired shade of blue.
  4. Fill the final third up with the blue mixture.
  5. Place in the freezer for 30-45 minutes. It doesn't have to be solid all the way through, just on top so that the next layer will stay above it.

White Layer:

  1. Pour the non-dairy yogurt into a bowl.
  2. Add 1/4 cup water and mix until well combined.
  3. Take the popsicle molds out of the freezer and fill the next 1/3 of the way.

  4. Place back the molds back in the freezer for 30-45 minutes.
  5. Take your popsicle sticks and push carefully through 1/3 of the way through the white layer. It should be soft enough to do so but firm enough that the rest of it will stay firm on top. If it isn't firm enough after adding the popsicle sticks, you can place them back in the freezer for 15-20 minutes until they are solid on top.

Red Layer:

  1. Add the strawberries, sugar and 1/4 cup water to a saucepan, and mix together.
  2. Cook on medium heat for 30 minutes, or until the strawberries are very soft.
  3. Transfer the strawberry mixture to a blender and blend until smooth.
  4. Pour the strawberries into a heat safe container through a strainer to separate most of the seeds out.
  5. Let the strawberry mixture cool for 10-15 minutes.
  6. Take the popsicle molds out of the freezer.
  7. Fill your popsicle molds the final 1/3 of the way with the strawberry blend.

  8. Place in the freezer for 4-6 hours. You'll know they're done when you move them around and see no liquid moving inside.

  9. Run the molds under room temperature water to help loosen the popsicles from the molds if they don't come out easily.
  10. Enjoy!!

Recipe Notes

* Time Saving Tip: The red layer takes the longest, so start prepping it first. Once it's cooking, move on to the blue layer.

**Substitution: If you have difficulty substituting key lime yogurt or don't like the flavor, substitute with vanilla yogurt.
