Maple Dijon Glazed Pork Tenderloin

This recipe is gluten free, dairy free, nut free and egg free. It pairs well with creamy polenta and broccoli or served over rice.

Ingredients

  • 2/3 cup maple syrup
  • 3 tbsp gluten free dijon mustard
  • 2 tbsp apple cider vinegar
  • 2 tbsp soy sauce
  • Salt and pepper to taste
  • 2 lbs pork tenderloin boneless

Instructions

  1. Preheat oven to 350 degrees.
  2. Place the pork in a shallow pan. I use a 13x9 pyrex pan.
  3. Mix all ingredients together and pour over the pork.
  4. Bake in the oven for 1 hour and 15 minutes, until the inside temperature reaches 145 degrees.
  5. Remove the pork from the oven and let it sit for 10 minutes.
  6. Slice the pork and serve on a platter with a gravy boat of the extra glaze.
  7. Enjoy!
