Spaghetti and Veggie Meat Balls

This recipe is gluten free, dairy free, nut free and soy free. It makes 18 veggie meatballs, which is equivalent to five servings for kids or three servings for adults.

Ingredients

Veggie Meatballs

  • 2 Hilary's Eat Well World's Best Veggie Burgers
  • 2 eggs
  • Coarse sea salt to taste

Spaghetti Sauce

  • 1 28 oz can of crushed tomatoes
  • 1 8 oz. can of tomato sauce
  • 1 small onion chopped
  • 4 cloves garlic chopped finely
  • 2 tbsp olive oil
  • 5 fresh basil leaves chopped
  • 1/2 tsp oregano
  • 1/2 tsp pepper
  • 1/4 tsp salt

Spaghetti

  • 4 cups of gluten free pasta or vegetable noodles

Instructions

Veggie Meatballs

  1. Let the veggie burgers defrost completely at room temperature.
  2. Preheat your oven to 400 degrees.
  3. Add the defrosted veggie burgers to a blender or use your hands to break them down until their finely crumbled.
  4. Transfer the veggie burger crumbles to a bowl and add two eggs.
  5. Mix with a fork until well combined and evenly coated.
  6. Cover a baking sheet with parchment paper and set aside.
  7. Using your hands, form small balls with the veggie meat ball mixture and add them to the parchment lined baking sheet. Repeat until finished, should make about 18 meat balls.
  8. Sprinkle the tops with coarse sea salt.
  9. Bake in the oven for 10 minutes.
  10. Remove from the oven, turn the veggie meat balls over and cook for 10 more minutes.
  11. Once the sauce is finished, add the meatballs to the pan for 3 minutes so that they can soak up some of the tomato sauce.

Spaghetti Sauce:

  1. Add all sauce ingredients to a medium pan and bring to a boil on medium heat.
  2. Once it reaches a boil, cover and reduce the heat to a simmer.
  3. Simmer for 20 minutes while the veggie meatballs are cooking in the oven.

Spaghetti:

  1. Cook the spaghetti while the sauce is simmering and follow instructions depending on the type of pasta you're using.

Recipe Notes

These veggie meat balls can also be enjoyed by themselves, or they go quite well with hummus and yogurt sauces.
