Melt the chocolate chips - we put them in a heat safe glass bowl on top of a small pot of boiling water and it melts in a couple of minutes.

Add the coconut oil to the melted chocolate and stir. This is to make the chocolate a bit thinner.

Dip the lollipop stick in the melted chocolate and then place the lollipop stick about 2/3 through a donut hole. The reason it's important to dip the lollipop stick in chocolate first is because it helps it stick to the donut better.

Spoon the melted chocolate over the donut (already on the lollipop stick) and make sure that you coat it on all sides.

Place the chocolate covered donut hole face down on the parchment paper (so the stick is facing up) and press gently into the parchment paper to slightly flatten the top of the donut. This will create the flat top of the pot of gold.

Repeat until all of your donut pops have been made.

Place in the refrigerator for 30 minutes.

Remove from the fridge and carefully lift them off of the parchment paper, one at a time.

Flip over and dust the sanding sugar on top to create the look of a pot of gold.

Repeat for all of them.
