Apple Cinnamon Gluten Free Pancakes

This recipe makes ten 3-inch pancakes, and takes 25 minutes total to prep and cook.

Ingredients

Pancakes:

  • 1 1/2 cups of Barney Butter Blanched Almond Flour
  • 1/2 teaspoon baking powder
  • 3 eggs
  • 1/4 cup coconut milk regular, not reduced fat kind
  • 1 teaspoon coconut oil
  • 2 tablespoons of organic apple sauce
  • 1/2 teaspoon of cinnamon
  • 1 teaspoon of honey

Apple Cinnamon Topping:

  • 2 organic apple peeled and sliced
  • 4 tablespoons of organic apple sauce
  • 1 teaspoon of cinnamon
  • 2 teaspoons of honey

Instructions

  1. Preheat your oven to 350 degrees.
  2. Prepare and mix all of the apple cinnamon topping ingredients and place it in a baking safe dish.
  3. Bake for 20 minutes.
  4. Heat a medium sized skilled on medium-low heat (I turn mine to 3) and add 1 teaspoon of coconut oil to the pan.
  5. Whisk all of the pancake ingredients together in a bowl until smooth.
  6. Once the pan is hot, use a large spoon to pour the pancakes onto the pan and cook for about 2-3 minutes per side.
  7. The pancakes and toppings should be finished at the same time.
  8. Spoon the topping onto pancakes, drizzle with honey and a tiny sprinkling of cinnamon on top.
  9. Enjoy!
