Gluten free chocolate chip cookie cake is such a fun way to celebrate birthdays and special occasions! The recipe is gluten free and dairy free, and full of delicious chocolatey flavor that will leave your guests asking for more.

Ingredients

  • 2 cups gluten free all purpose baking flour
  • 3/4 cups maple syrup or brown sugar
  • 6 tbsp coconut oil
  • 4 tbsp almond butter
  • 1 cup chocolate chips
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp vanilla

Instructions

  1. Preheat your oven to 350 degrees.
  2. Combine your dry ingredients and set aside.
  3. Combine the wet ingredients and mix on low-medium speed until smooth
  4. Add your dry ingredients, a little at a time and mix until smooth.
  5. Add your chocolate chips and mix on low for 30 seconds.
  6. Cut out a round piece of parchment paper and place it on the bottom of a 9" round baking dish. Lightly grease the sides of it.
  7. Transfer your gluten free chocolate chip cookie dough into your baking dish and press to make sure it's evenly spread out.
  8. Bake at 350 degrees for 20 minutes.
  9. Serve directly from the baking dish or transfer carefully to a cooling rack after it cools for a few minutes.
