Gluten Free Christmas Cut Out Cookies

This recipe is gluten free and dairy free. It makes 24 medium sized cookies.

Ingredients

  • 1 cup blanched almond flour we used Barney Butter
  • 1 cup gluten free all purpose flour we used King Arthur
  • 1/2 cup palm oil shortening
  • 1 cup organic white sugar
  • 2 tsp vanilla
  • 1 egg
  • 1 tsp baking soda

Instructions

  1. Add the shortening, vanilla, egg, and sugar to a mixing bowl and mix on medium speed until it's smooth and well combined.
  2. Combine the almond and gf flour in a bowl and add to the mixing bowl slowly until well combined.
  3. Separate the dough in two and individually wrap them in plastic wrap and place in your refrigerator for 30 minutes - 1 hour. You want the dough to be firm, but not hard or you won't be able to roll it.

  4. Set a piece of parchment paper on your counter.
  5. Remove the first ball of dough from the refrigerator and place it on top of the parchment paper.
  6. Place a layer of plastic wrap on top of the dough and roll it with a rolling pin until it's about 1/4 inch thick.
  7. Remove the plastic wrap top layer.
  8. Use Christmas themed cookie cutters to create the cut outs.
  9. Transfer the parchment paper onto a cookie sheet and place in the freezer for 10 minutes. This makes the dough firm enough that you can easily peel away the leftover dough from around the edges of the cookie cutter shapes you made. It's hard to do this without placing it in the freezer, so don't skip this step.
  10. Preheat oven to 350 degrees.
  11. Remove the tray from the freezer, peel away the edges surrounding the cookie shapes, and set aside to make more cookies later.
  12. Bake for 6-8 minutes, just until fully cooked but not browned.

  13. While they're cooking, follow the steps above for the second dough ball. Or if you have enough room in your oven and enough cookie sheets you can get the second batch ready while the first one is in the freezer cooling prior to baking.
  14. When the first batch is done, remove the parchment paper and cookies from the pan and let them cool completely. Leave them on the parchment paper while they're cooling so they can harden before transferring to a plate for decorating.
  15. Decorate with your favorite cookie icing and sprinkles.
  16. Enjoy them right away or give them as gifts wrapped in cellophane with a cute ribbon.

Recipe Notes

Not interested in cutting out and decorating cookies, but still want a delicious gluten free sugar cookie recipe? Follow the recipe above, increase the sugar by 1/4 cup, add 1.5 tsp of baking powder, and don't worry about refrigerating before baking. Roll into balls for simple round sugar cookies!

If you freeze the dough for longer than the recommended hour, just let the dough defrost until it's still firm but pliable.
