This recipe creates two cups of vanilla frosting, which is enough to frost 1 dozen cupcakes. It is gluten free, vegan and free of the top 8 most common allergens.

Ingredients
1/2cuppalm oil shortening
1/2cupvegan butter
2tspvanilla extract
3cupspowdered sugar
1tbspcoconut milk
Instructions
In a stand mixer, add your palm oil shortening and vegan butter (we like Earth Balance Olive Oil Spread) and blend on medium for about 5 minutes until it's totally creamy and well combine.
Add your vanilla and coconut milk.
Add your powdered sugar one cup at a time.
Add more powdered sugar as you start to see it mixed in. It doesn't have to be smooth, just combined enough to keep it from flying out of the bowl.
Once all of the sugar is in, beat for another 3-5 minutes.

Recipe Notes
Add 1 tsp of coconut milk at a time if it's too dry.
