Gluten & Dairy Free Chocolate Icing

This recipe is gluten free, dairy free, egg and peanut free. It makes 3 cups of icing.

Ingredients

  • 2 cups organic cane sugar or coconut palm sugar
  • 1/2 cup cocoa powder
  • 1/2 cup coconut oil
  • 1/2 cup almond milk

Instructions

  1. Combine all of the ingredients into a medium saucepan.
  2. Bring to a boil, and boil for one minute.
  3. Remove from heat and transfer to a stand mixer, or alternately a mixing bowl with a hand mixer.
  4. Beat the mixture on medium for 3 minutes.
  5. It will look like a glaze, which is exactly how it's supposed to look.
  6. Pour it over your cake or donuts and let it set until it dries. This will take 20 minutes, but you can speed that up if you're in a hurry by putting it in the refrigerator for 5 minutes.
  7. Store the leftover icing in an airtight container and place it in the freezer until you need it next time.
  8. Enjoy!
