Gluten Free Chocolate Chip Cookie Dough Footballs

This recipe is gluten free, dairy free, peanut free and vegan. It makes 12 individual servings. Multiply the recipe if you want to make more.

Ingredients

  • 1/2 cup Barney Butter blanched almond flour
  • 1/2 cup gluten free all purpose flour we used King Arthur Measure for Measure
  • 1/2 cup vegan butter we used Earth Balance olive oil
  • 1/2 cup organic white sugar
  • 1 1/2 cups chocolate chips we used Enjoy Life semi-sweet
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 1/8 cup white icing

Instructions

  1. Add the butter, vanilla, and sugar to a mixing bowl and mix on medium speed until it’s smooth and well combined.
  2. Combine the almond flour, gluten free flour and baking soda in a bowl and add to the mixing bowl slowly until well combined.
  3. Once well mixed, add 1 cup chocolate chips and mix on low for about 30 seconds.
  4. Line a baking sheet with parchment paper.
  5. Using your hands, roll small balls of the cookie dough and add them to your baking sheet.
  6. Form football shapes by using your fingers to squeeze the top and bottom into an oval shape.
  7. Repeat until all the dough is used.
  8. Place the baking sheet in the fridge for 5 minutes while you melt the chocolate.
  9. Melt the remaining 1/2 cup chocolate chips in a double boiler on your stove top or via your microwave. I recommend removing from heat once you see that most of them are melted and then stirring to finish melting them. This helps prevent over cooking.
  10. Remove the baking sheet from the refrigerator and spoon the melted chocolate over your football shaped cookie dough until each is completely covered.
  11. Put the baking sheet in the freezer for 30 minutes to let the chocolate set.
  12. Remove from freezer, and trim the edges of extra chocolate with a sharp knife.
  13. Arrange them on a cutting board or serving plate and draw the football laces on using your favorite white icing.
  14. Enjoy!
