Baked Plantain Chips and Guacamole

Ingredients

  • 1 large green plantain
  • Himalayan salt to taste
  • 1/2 tbsp olive oil
  • 1/2 avocado
  • Pinch of red Hawaiian salt can be substituted with coarse salt
  • Splash of fresh lime juice

Instructions

Plantain Chips:

  1. Preheat your oven to 350 degrees.
  2. Cut the top of the plantain off and use a knife to help peel it.
  3. Slice the plantains very thin, maximum of 1/8 inch thickness.
  4. Add the plantains to a bowl or plastic bag, depending on if you prefer to use your hands or keep them clean.
  5. Add oil to the bowl and mix with your hands or use a plastic bag and shake it up to coat evenly.
  6. Arrange on baking sheet.
  7. Sprinkle with Himalayan salt.
  8. Bake for 10 minutes.
  9. Remove from oven and flip them over.
  10. Bake for 8 more minutes.
  11. Remove from oven and let cool.

Guacamole:

  1. Add your avocado to a bowl and mash well with a fork.
  2. Add sprinkling of red Hawaiian salt, and mix until well combined.
  3. Add a splash of lime and mix again.
  4. Serve the baked plantain chips and guacamole together and get your healthy snacking on!
