Last weekend, we went to a birthday party and they served chocolate chip cookie cake. I forgot to ask what the mom was serving for dessert in advance and assumed it would be cake or cupcakes, so that’s what I packed. Normally, this makes my daughter happy and feel included but this chocolate chip cookie cake…well, it looked amazing and she was envious.
I was surprised that even though my daughter knows gluten makes her very sick almost instantly, she actually asked if eating a little would hurt. Of course, I told her that eating a little was not ok and she understood and ate her cupcake. I also promised her that we would make our own gluten free chocolate chip cookie cake together at home, and that it would be even better because we made it together.
I wanted to make it really fun, so when we got in the kitchen to get started both of my kids wore aprons and chef hats and giggled the whole way through. I was all smiles too, though secretly nervous about how the cake would turn out. Thankfully, it was great and I was so relieved!
The recipe is actually quite simple, and only bakes for 20 minutes. I enjoyed it plain, and my kids liked topping it with chocolate frosting and sprinkles along the edge.

Gluten Free Chocolate Chip Cookie Cake
Gluten free chocolate chip cookie cake is such a fun way to celebrate birthdays and special occasions! The recipe is gluten free and dairy free, and full of delicious chocolatey flavor that will leave your guests asking for more.
Ingredients
- 2 cups gluten free all purpose baking flour
- 3/4 cups maple syrup or brown sugar
- 6 tbsp coconut oil
- 4 tbsp almond butter
- 1 cup chocolate chips
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp vanilla
Instructions

Preheat your oven to 350 degrees.

Combine your dry ingredients and set aside.

Combine the wet ingredients and mix on low-medium speed until smooth

Add your dry ingredients, a little at a time and mix until smooth.

Add your chocolate chips and mix on low for 30 seconds.

Cut out a round piece of parchment paper and place it on the bottom of a 9" round baking dish. Lightly grease the sides of it.

Transfer your gluten free chocolate chip cookie dough into your baking dish and press to make sure it's evenly spread out.

Bake at 350 degrees for 20 minutes.

Serve directly from the baking dish or transfer carefully to a cooling rack after it cools for a few minutes.
