How to Make Chocolate Lollipops – Dairy Free

If you haven’t noticed by now, our family really enjoys celebrating Valentine’s Day! For the last few years, my daughter has given out scratch and sniff Valentine cards to friends, sometimes with a pencil and sometimes with a gluten free and top 8 free gummy pouch attached to it. They’ve always been well received, but this year she told me she wanted to do something extra special and make Valentine’s for her classmates.
We knew it had to be something small that would hold up well in backpacks all day, and after some brainstorming we decided to make heart shaped chocolate lollipops. So, the first thing we did was go to the local crafts store to buy our supplies. We needed lollipop molds and sticks, small tags to write her classmates names, ribbon, and little cellophane bags to wrap them up. She chose pink twine for the ribbon and we found the cutest lollipop sticks that have red hearts all over them.
Next, we needed the most important thing…the chocolate! Our family is both gluten free and dairy free, so it was important for us to use a chocolate that met our needs. We knew that we were going to get really messy, which is half the fun, and I wanted her to be able to lick her fingers when we were all done.
We love Pascha chocolate, and we decided to use their dark and white chocolate bars to have some variety. Aside from having great taste, I really like the ingredients used to make Pascha chocolate. All of their chocolate is organic, non GMO verified and free from peanuts, tree nuts, gluten, soy, and dairy which makes me feel good as a mom and chocolate lover.
Once we had our chocolate it was time to get started! Here are the simple steps to learn how to make chocolate lollipops. I hope you have as much fun making them as we did!!
How to Make Chocolate Lollipops
- 1 3.5 oz Pascha organic dark chocolate bar
- 4 1.1 oz Pascha organic white bar
- Sprinkles (optional)
Step 1: Melt your white and dark chocolate in separate bowls and set aside.
I recommend doing this on the stove top with a double boiler, or placing the chocolate in a heat safe bowl that has an edge that will fit on top of a pot with a small amount of water in it. Do not place the bowl directly in the hot water below. Turn the stove onto medium heat, and wait for the chocolate to start to melt via the steam from the water below. As soon as it begins melting, stir the chocolate continuously. When you see that 80% of it’s melted, remove it from heat with a heat safe glove and finish stirring it away from the heat. The hot chocolate will be enough to finish melting the rest, and will prevent it from over cooking or clumping.
Step 2: Pour the melted chocolate into your lollipop molds.
Step 3: Add your lollipop stick.
Place your lollipop stick about 1/3 of the way into the lollipop and turn it to coat it in chocolate. This will help it stick to the chocolate better. If the lollipop stick is not totally covered, then add a little bit more chocolate to the mold so that it is.
Step 4: Add sprinkles or other toppings. (optional)
Step 5: Place in the refrigerator for 4 hours, or until chocolate is solid.
Step 6: Remove lollipops from the molds.
Be careful to remove the chocolate portion by pushing through the back of the mold, rather than by pulling on the lollipop stick.
Step 7: Wrap and Tie.
Cover the chocolate lollipop with a cellophane bag and tie with a ribbon. If you are adding a tag with a note on it, first punch a hole in the tag and attach it to the ribbon before tying it around the cellophane bag.
