Sauteed Banana Apple Gluten Free Oatmeal

Sauteed Banana Apple Gluten Free Oatmeal makes a simple and satisfying breakfast that’s kid-friendly and mom approved.

The last few days we’ve been experiencing a cold front, and temperatures have dipped to 47 degrees. I realize that’s not cold by many people’s standards, but for South Floridians it’s very, very cold. While the cooler weather is a welcome change, I found my family craving warmer foods, especially in the chilly mornings. We rotated between apple cinnamon pancakes, waffles and eggs the first two days, but today we wanted something different.

We had some gluten free certified oats that I’d been wanting to introduce the kids to, so I decided to work on a gluten free oatmeal recipe. Recently, Bolthouse Farms sent me some samples of their new non-dairy Plant Protein Milk to get my honest opinion, and honestly they’re really tasty! As a mom, I really like that each serving has 10 grams of protein that’s derived from peas, and that it’s also a good calcium source. We had some of their Vanilla milk left, so I decided to try my hand at making an oatmeal that was extra rich in protein and naturally sweetened without refined sugars.

The result was Sauteed Banana Apple Gluten Free Oatmeal which is bursting with flavor. It was a huge hit with the kids and grown ups in our house and the refined sugars that can often accompany oatmeals were not missed at all. Add to that simple preparation that takes 15 minutes, and we felt we have a winner in this recipe for busy mornings.

This recipe is gluten free, dairy free, refined sugar free, vegan and paleo friendly. It makes four kids servings, or two hearty adult servings.

  1. 1 cup peeled and diced apples
  2. 1 large banana
  3. 1 cup gluten free oats
  4. 2 cups water
  5. 1 tbsp maple syrup (optional)
  6. 1/2 tsp cinnamon
  7. 1 tbsp coconut oil
  8. 1/2-1 cup dairy free milk (we used Bolthouse Farms Vanilla)

  1. In a medium sautee pan, heat your coconut oil on medium.
  2. Add in diced apples, cinnamon, and maple syrup and sautee for 8 minutes, or until apples are soft.
  3. Slice your bananas and add to the sautee pan after the apples have been cooking for five minutes.
  4. Sautee bananas for the last 3 minutes with the apples, and then remove the bananas and set aside.
  5. Add the water to the apples and increase the cooking temperature to high to bring to a boil.
  6. Once boiling, add the oats and reduce the cooking temperature to medium.
  7. Cook for 7 minutes, stirring every minute to make sure it’s cooking evenly.
  8. Divide the oatmeal between bowls and add the bananas on top.
  9. Pour 1/4 cup cold milk on top of each bowl and serve.
