Gluten Free Bananas Foster French Toast

Gathering around the breakfast table on the weekends is a family tradition in our home. Most Sundays we go all out and make a big breakfast main dish with sides of fresh fruit. This past weekend, my daughter asked for french toast and I wanted to change it up a bit. As you’ve probably realized by now, I like to make our own fruit sauces and toppings instead of using maple syrup. My kids love bananas, so this time I decided to make a kid-friendly version of gluten free bananas foster french toast.

I used three ingredients to make the sauce and let it simmer for 20 minutes while I prepared the french toast so that the banana flavor would really cook into the sauce and my kids loved it. It is refined sugar free, but as far as they were concerned it was the “best syrup” they’d ever had 🙂 .

If you thought that your days of enjoying french toast were over when you became gluten free, think again! There are so many types of gluten free bread available now that it’s actually quite simple to make. This time we used sandwich bread but it would also work great with homemade bread or gluten free challah which I’ve seen in the frozen sections of several grocery stores. Here is the recipe. Gluten Free Bananas Foster French Toast
This recipe is gluten free, dairy free, nut free and soy free. It makes four servings (2 adult and 2 toddlers), and takes 20 minutes to make including prep time.

Ingredients:

  1. 2 bananas
  2. 4 tbsp unrefined virgin coconut oil
  3. 1/4 cup coconut palm sugar
  4. 4 slices of gluten free bread
  5. 2 eggs
  6. 1/3 cup almond milk
  7. 1  1/2 tsp ground cinnamon
  8. 1/2 tsp ground nutmeg

Directions:

  1. Heat 3 tbsp of coconut oil and 1/4 cup coconut palm sugar in a small skillet on your stove top.
  2. Slice your bananas into 1/4 inch slices and add to the sauce mixture.
  3. Cook the sauce on medium until it comes to a bowl and them reduce it to low for 20 minutes, stirring it every couple of minutes to make sure it’s evenly coated.
  4. While the sauce is cooking,  heat 1 tbsp coconut oil in a separate medium skillet on medium high on your stove top.
  5. Combine the egg, almond milk, cinnamon and nutmeg and beat well to create your egg wash in a shallow bowl.
  6. Coat the slices of bread in your egg wash and place on the preheated skillet.
  7. Cook 3 minutes and turn/flip the bread to the other side and cook for 3 more minutes. You should see a light brown color when it’s ready.
  8. When finished cooking the french toast, cut them diagonally to create triangle shaped pieces.
  9. Arrange them on each of the individual plates and pour the bananas foster sauce on top. I like to put the sauce in a decorative bowl and spoon it onto the pieces, making sure that everyone gets even amounts of the “candied” bananas.
