Dairy Free Mashed Potatoes with Bacon

Dairy free mashed potatoes with bacon are a crowd pleaser any time of year.

dairy free mashed potatoes with bacon

Mashed potatoes are always a hit in our house, no matter what time of year. Growing up, I never actually liked mashed potatoes very much and it wasn’t until we started making them without the dairy that I grew to really enjoy them.

Over the years, we’ve experimented with plain to spicy to now serving them with gluten free bacon crumbles. Our friends and family never miss the dairy that’s traditionally loaded in mashed potatoes…or the rock in their stomach that they’re used to getting after they eat traditional mashed potatoes.

This recipe is gluten free, dairy free, and refined sugar free. If you’re looking for a vegan option, you can simply omit the bacon and add additional salt to taste.

Ingredients:

  1. 6 russet potatoes
  2. 1.5 cups coconut milk
  3. 1/2 cup safflower oil
  4. salt to taste
  5. pepper to taste
  6. 5 slices of gluten free bacon

Directions:

  1. Wash and cube the potatoes, leaving the skin on.
  2. Add the potatoes to a large pot, cover with water and bring to a boil.
  3. Cook the potatoes until they are very fork tender.
  4. While the potatoes are cooking, cook the bacon in a separate pan until they are fully cooked. Set aside to cool when done.
  5. Drain the water and add the salt, pepper, 1 cup coconut milk and safflower oil to the pot.
  6. Using a hand mixer, blend until the potatoes are creamy. If they need more moisture, add the 1/2 cup of coconut milk and then 1-2 tbsp of coconut milk at a time and blend until your desired consistency.
  7. Taste test throughout and add salt and pepper if needed, but remember that the bacon will add a salty flavor too.
  8. Crumble the cooked bacon strips and stir by hand into the mashed potatoes.
  9. Enjoy!

    • Awesome! We have a vegan guest this year for Thanksgiving so we’ll be making it two ways – with and without the bacon. Easy to do since it’s the last ingredient to add.
