Dairy Free Bacon Mashed Potatoes

If you think that you can’t enjoy mashed potatoes and maintain a dairy free and gluten free lifestyle, think again! This delicious recipe is perfect for the holidays or any other time you are craving mashed potatoes. It’s also great for moms on the go or busy families, as this whole side dish can be prepared in 30 minutes.

Dairy Free Bacon Mashed Potatoes


  1. 6 russet potatoes
  2. 1.5 cups coconut milk
  3. 1/2 cup safflower oil
  4. salt to taste
  5. pepper to taste
  6. 5 slices of gluten free bacon


  1. Wash and cube the potatoes, leaving the skin on.
  2. Add the potatoes to a large pot, cover with water and bring to a boil.
  3. Cook the potatoes until they are very fork tender.
  4. While the potatoes are cooking, cook the bacon in a separate pan until they are fully cooked. Set aside to cool when done.
  5. Drain the water and add the salt, pepper, 1 cup coconut milk and safflower oil to the pot.
  6. Using a hand mixer, blend until the potatoes are creamy. If they need more moisture, add the 1/2 cup of coconut milk and then 1-2 tbsp of coconut milk at a time and blend until your desired consistency.
  7. Taste test throughout and add salt and pepper if needed, but remember that the bacon will add a salty flavor too.
  8. Crumble the cooked bacon strips and stir by hand into the mashed potatoes.
